Products of Produttori del Barbaresco
In 1894 Domizio Cavazza, owner of the castle in Barbaresco, decided to produce a wine from Nebbiolo that would not be called Barolo. He understood that the hills in Barbresco could give grapes capable of producing a wine that is a standalone from Barolo, produce not far from there. 
 He created “Cantine Sociali di Barbaresco” uniting 9 wine producers to create what he defined “a luxury table wine” and de facto  creating the Barbaresco wine as we know it and love today. This winery was closed between the 1920s and 1930s because of fascists economic laws. 
 Following in his footsteps Don Fiorino Marengo, the priest of Barbaresco, in 1958 brought together 19 wine producers to protect and maintaining the reputation of Barbaresco and produce high quality Barbaresco wine. 
This objective is still pursued today – Produttori del Barbaresco is one of the most prestigious producers of Barbaresco DOCG; as Robert Parker stated “(they winery) continues to set some of the highest standards of winemaking for any cooperative in the world” (Robert M. Parker Jr. The Wine Advocate 2-28-90). 
Today this wine cooperative counts 50 members of all ages, cultivating 100 hectares of vineyards (1/7th of the whole vineyard area in Barbaresco). 
The vineyards are planted on the hill slopes, recieving the otpimal amount of heat and sunlight to perfectly ripen the grapes; fog in the mornings and wide diurnal ranges help to slow down the loss acidity and floral aromas in the grapes. Barbaresco DOCG is a GI in Piemonte, located around the towns of Barbaresco, Neive and Treiso. Its made from 100% Nebbiolo; the minimum ageing required by law is of 26 months, of which 9 months have to be in wooden barrels. These wines are renowned for their high acidity and tannins with elegant aromas of red fruit and dried herbs. 
In Produttori del Barbaresco the two main wines produced are Barbaresco and Barbaresco Riserva. 
For Barbaresco fermentation is done in temperature controlled stainless steel vats, with skin contact lasting 24 days. To maximize colour and polyphenols extraction pumping over is done twice a day. Once fermentation is over the wine rests and matures in 50 hectoliters oak barrels. 
Whereas for the Barbaresco Riserva the skin contact is increased to 32 days and the barrel ageing goes up to 36 months followed by a 9 month period in bottle prior to sale. 
In great vintages they produce Barbaresco Riserva from 9 single vineyard crus, which are stated on the numbered label together with the name of the vineyard owner. These wine age longer than standard Barbaresco, with the minimum total ageing requirement increasing to 50 months, giving wines of great structure and elegance, with pronounced tertiary aromas of tobacco, leather and mushrooms with a great potential for further ageing. 
Produttori del Barbaresco grows only Nebbiolo, an autochtonous grape, and produces around 500'000 bottles per year. 
Usually 75% of the wine produced is Barbaresco and Barbaresco Riserva, the remaining 25% of the grapes, not suitable to make wine capable of ageing, is used to make Nebbiolo Langhe DOC, a fresh and ready to drink wine.
